COROWise™ Spicy Orange Chicken

Serves:  4

INGREDIENTS:

  1. 1/2 Cup Minute Maid® Premium Heart Wise® Orange Juice
  2. 1 tsp. Kosher salt
  3. 1/4 tsp. Cayenne Pepper, ground
  4. 1 lb. boneless, skinless, chicken breast

PREPARATION:

  1. Mix all marinade items together in a resealable plastic bag.
  2. Place chicken in marinade for 3 hours, or refrigerate overnight.  reserve marinade after chicken is removed.
  3. Preheat oven to broil.  Cook chicken 4 minutes per side 3 – 4”  from broiler.
  4. Meanwhile, heat remaining marinade to boiling in a small saucepan until it thickens slightly, stirring occasionally.
  5. Serve thickened marinade over chicken breast.
  6. Enjoy this Healthy Recipe!

I have been in the food service industry for 16 years and eating is one of the best things to do. I started out as a pizza delivery person and worked my way up to managing at casual dinning Applebee's. I live in upstate New York and we get a full spectrum of weather here so it is not always easy to fire up the outdoor grill during the dead of winter. That is why during the summer time, when you get a chance to use it you do. Holidays, camping, time with friends, or birthday parties are a great time to introduce this sauce by cooking it right on or having it on the side for dipping.

  1. 11oz jar Koon Chun Hoisin Sauce
  2. 1 Tlbs garlic powder
  3. 1 Tlbs Asian fire spice powder
  4. 4 Tlbs honey
  5. 6 Tlbs soy sauce

Great for summer time outdoor cooking on ribs, chicken, or fish.

Ingredients;

4 Roma tomatoes

8 cherry tomatoes

3 cloves of garlic

salt

1/2 pack of Italian salami

1/2 red onion

3 crushed red chili's

1/4 green pepper

Preparation:

  1. Sauté the onion, garlic, green pepper in olive oil until nearly cooked.
  2. Then add tomatoes and simmer slowly (about 20 min until fully reduced down) with salami, and a pinch of Italian herbs, salt and red chili's
  3. Serve with green salad and linguine.
  4. Enjoy this simple and healthy meal, with 1/2 a plate of salad and 1 cup of pasta.

Outsmart Sugar Cravings: Super Snacks

 11775233034yh9Dd Many times sugar cravings can derail even the most carefully devised eating plans; however, if we substitute these healthy munchies for sweet heavy-hitters, we can snack ourselves on the way to being healthier and provide our bodies with healthy nutrition.

  • Chew  sugar-free gum, which can burn more calories
  • Eat an apple or a handful of baby carrots between meals.  Naturally, sweet, they can tide  us over to the next meal.
  • Add protein, like cottage cheese or peanut butter, to your snack to feel even more full for a longer period of time.
  • Reach for peanuts. Unlike most salty foods, peanuts will not make you crave sugar.  They’re protein-rich and very satisfying and compensate for the extra calories naturally.
  • Air-popped popcorn of your own, which can be sprayed with Pam spray and then add spices of your liking i.e., chili powder etc.  this is a fiber-rich, low-calorie alternative to sweets.

Broccoli Bean Quesadillas  

Ingredients:

  1. 1 cup of canned black beans, rinsed
  2. ¼ cup salsa
  3. 4 oz part skim mozzarella cheese (1 cup grated)
  4. 1 cup fresh broccoli, finely chopped
  5. 8- 6-inch corn tortillas
  6. Pam cooking spray

Directions:

In large mixing bowl, mash beans with a fork. Mix in salsa, cheese, and chopped broccoli. Coat frying pan with cooking spray and heat pan over medium heat. Lay tortilla flat in pan, spread ~1/3 cup of the bean filling on the tortilla, and top with another tortilla. Compress the tortillas down with a spatula and cook for 3-4 minutes on each side, until lightly browned and cheese has melted. Remove from pan and repeat with remaining tortillas. Makes 4 servings.

*This is an easy snack or vegetarian entree, high in fiber and iron while still low in fat.

Nutrition Information:

Each Quesadilla = 320 calories

30 g carb

7.5 g fiber

10.5 g protein

6 g fat

BelGioioso Fresh Mozzarella & Summer Entertaining Ideas

I’m fond of shopping at Sam’s Club and they have some wonderful BelGioioso Cheese, as well.  Here’s a few things that could make your summer entertaining easier!

FRESH MOZZARELLA SANDWICHES

  • Create deliciously distinctive sandwiches with prosciutto, tomatoes and slices of Fresh Mozzarella cheese on your favorite crusty bread.  Garnish with fresh basil and drizzle with extra olive oil.

FRESH MOZZARELLA BRUSCHETTA

  • Create a special bruschetta by rubbing toasted bread slices with olive oil and topping with slices of Fresh Mozzarella cheese.  Broil until cheese starts to melt, then top with chopped, roasted red peppers or your favorite tomato bruschetta and serve.

Rubbed the wrong way?

Something ever rub you the wrong way?  What are your favorite herbs and spices?Well, take a closer look at what rubs you enjoy for summer.  Mix your favorite together.  Use with and on your favorite tender cuts of chicken, meat and fish.  Gently, press into the outside flesh of the meat, chicken or fish before cooking.

 

Use some favorite 100% juice or an acid, such as an apple cider vinegar.  Then, mix with your spice that you enjoy.  Here’s one of my favorites:  mix some Italian seasoning, fresh parsley or cilantro, combine with some oregano, rosemary and thyme.  Another that would be good garlic, grated lime peel and some cracked pepper.
