Cook's Corner: Pasta with Greens & Beans!

Ingredients:

6 garlic cloves, coarsely chopped

4 cups of escarole

1-1/2 cups drained cannellini beans

2 cups vegetable broth

6 oz. uncooked pasta per pkg directions


1. Lightly spray a large nonstick saucepan with cooking spray. Add garlic; cook over medium heat~5 minutes.

2.  Add escarole andbeans; cook 3 minutes. Add broth; bring to boil.  Reduce heat; simmer 3 minutes.  Add cooked pasta; stir 2 minutes longer.  Let stand 5 minutes before serving.  Enjoy!

    This recipe is so easy and so healthy! You will just love this, too. It is absolutely one of my favorite recipies of all time. ( As an extra: I even add: cooked chicken and cut it up in cubes to the rest of the recipe and make it a one-pot-meal. And is it ever delicious! Please come back and let me know how you like it.
